Handling
At this point, the first and most important thing is to properly preserve the meat until the day you cook it so it doesn’t lose its highest quality. 2 options.
You receive the order and cook it within 4 days after.
– Keep in the refrigerator (below 4°C)
You receive the order and will cook it after 4 days.
– You can freeze and preserve it for up to 12 months (below 0°C).
– Thaw in the refrigerator 48 hours before cooking the meat.
– n this state, the meat can stay in the refrigerator for UP TO 4 days.
– CANNOT BE REFROZEN.



Preparation

– Remove the Salvaje Selection cuts from vacuum packaging 2 to 18 hours before cooking.
– Let rest in the refrigerator. (SEE IMAGE. Ideally on a metal tray with a rack that can be purchased at any gourmet kitchen store).
NOTE: This will dry the meat on its entire surface and during cooking it will seal, preserving all the juiciness and also creating an incredibly textured crispy outer layer.
– 1 hour before cooking. Remove the meat from the refrigerator and let it come to room temperature.
NOTE: This is important to be able to cook juicy cuts and for the center to reach a good temperature without overcooking.

When grilling, always make sure the grill is clean. It is recommended to wait until it is very hot with coals and at that moment brush it with a metal brush and/or with paper and oil.
